The caffeine has been removed naturally (through water treatment) to ensure the purity and preserve the taste and aroma of a classic espresso. The decaffeination is carried out prior to the roasting of the coffee, using water. It is the method whereby the green coffee is immersed in water, the caffeine content is dissolved and removed.
